From Makura Farm in the Carmel Heights of Northern Israel. Makura presses the extra virgin olive oil on the same day that they harvest the olives, using cold-press methods that preserve the quality. Souri (also Suri) is a variety of olive native to the Carmel Heights. The variety yields a medium robust, rich and peppery olive oil. The majority of olive trees in the groves at Makura farm are the Souri variety, with some trees more than a thousand years old.
