Want a quick and easy dinner that will please (almost) everyone? This four ingredient dish takes minutes to prepare and only 20 minutes to cook. It is generally agreed that rich and oily fish like salmon typically pairs well with full-bodied white wines. For this dish, I enjoyed an oak-aged chardonnay from Joseph Phelps. Add a tossed salad or baked potato (or both) to round out this meal.
Ingredients:
2 lbs. Salmon
1/4 c. Brown Sugar
4 tbsp. Dijon Mustard
Salt and Pepper
Instructions:
Preheat your oven to 425 degrees. Rinse and pat dry your salmon placing it on a baking sheet, skin down. Combine brown sugar and dijon mustard in a bowl until incorporated. Sprinkle salt and pepper on the salmon. Spoon and spread the brown sugar/dijon mixture over the top and sides of your fish. Place salmon in the oven for 20 minutes or until the salmon flakes with a fork.
