Fermentation Mode: 

Upon early morning harvesting (by hand), the grapes are carefully destemmed and undergo a whole-berry fermentation. After a cold soak for 4-7 days, and inoculation with a select yeast, the grape must is fermented at 82˚F, which allowed for a hot extraction on the skins. For fermentation cap management, the juice is pumped over the skins two (2) times per day, wetting the cap evenly for a nice healthy fermentation.

Maturation Mode & Time:

Aged in 30% new French oak and 70% neutral oak for 20 months before bottling
