They experimented and found that their beloved Tingo Maria coffee from Peru can withstand heat and offers an indulgent cup when roasted to the darkest side on the medium roast scale. When testing this bean on their S35 Loring machine, they found the profile that brings out the nice bold flavors of a darker roast without compromising the integrity and quality of the coffee they work so hard to source.
