The Sauvignon Blanc grapes are grown on all of the Pouilly-Fume terroirs: Villiers and Barrois Limestones, Marls with oyster shells; Clayey-flint soils
The grape juices are fermented traditionally in stainless steel tanks during 7 to 15 days.
Maturation Mode & Time:
Aging takes place in stainless steel vats, on fine lees for a period of three to six (3-6) months before blending and bottling.
